Description

Spanish Roja is a flavor-first heirloom with the colorful red-brown cloves and loose, easy-peel skins that make Rocamboles so appealing. Curling scapes offer an early crop, while the mature bulbs deserve a labeled spot in any serious garlic tasting.

Small raw amounts bring strong, complex spice to pesto, aioli and salsa. Roasting mellows the heat and reveals a sweeter depth that is fabulous in potatoes, soups, sauces and spreads.

Plant in fall with winter cold and excellent drainage. Follow the leaves rather than the calendar for its later harvest, then cure the bulbs gently in shade.
