This package contains 2 pounds of certified organic Jerusalem artichoke planting tubers. Also called sunchoke, Jerusalem artichoke is a perennial sunflower grown for its crisp, edible tubers. The plant can spread vigorously from tubers left in the soil, so choose a permanent contained bed or a large container.

Planting and harvest
Plant when the soil can be worked in late winter or early spring. Place tubers with growing points facing up, cover with soil, and water well. Keep the bed evenly moist while shoots establish. Tall stems may need protection from strong wind.
Harvest after frost and once the tops begin to die back. Loosen the soil and lift tubers carefully. Tubers left in the ground can regrow the following spring; remove stray pieces if you do not want the planting to spread. In climates where the soil does not freeze hard, tubers can be left in the ground temporarily and dug as needed.
Scrub the tubers before use. Their crisp texture can be enjoyed raw, roasted, sautéed, mashed, or added to soups.
