Ernest Strubbe's Green Dent Corn (Zea mays)

Sold for years as Oaxacan Green Dent, this heirloom corn was actually bred by Minnesota farmer Ernest Strubbe over four decades. Broad ears fill out with striking emerald kernels on sturdy 6 to 7-foot stalks. Grind the soft starch kernels into rich, colorful cornmeal or grits.
