Planting and harvest
Plant in fertile, well-drained soil and keep the crown evenly moist without leaving it waterlogged. Remove flower stalks so the plant can direct energy to its crown. Do not harvest during the first growing season. Take only a limited harvest during the second season, then harvest established plants in late spring to early summer. Stop by midsummer so the plant can rebuild reserves for the following year.
Food-safety note: Eat only the leaf stalks. Rhubarb leaf blades are toxic and must not be eaten. Remove and discard the leaf blades before preparing the stalks.
